• 4 Potatoes;
  • 4 – 5 eggs;
  • 1 (medium) onion;
  • 50 ml. of olive oil;
  • Shiitake Mushrooms - 70 g .;
  • Himalayan salt - at taste;







Grate the pared potatoes using a large grater, and cut the mushrooms into small cubes. Heat the pan with olive oil to a moderate temperature and put the potatoes and the mushrooms. Add the chopped onion and fry for 10 minutes, stirring continuously. Add some salt, cover the mixture up and remove it from the hotplate for 10 minutes. Beat the eggs in a large bowl and add the mixture from the pan. Heat a little olive oil, pour the ready mixture and cover with a lid. When the lower part acquires a pleasant tan, use the lid to turn the tortilla and fry it until it gets a light tan on the other side. Put the prepared tortilla in a plate and serve it after it has cooled slightly.
