• 130 g. of fresh Shiitake mushrooms;
  • 2 green peppers;
  • 2 red peppers;
  • 2-3 eggplants;
  • 100 of olive oil;
  • 3-4 tomatoes;
  • Salt;
  • Pepper;
  • Parsley for sprinkling.




Pare and cut the eggplant into slices, add salt to it and let it drain for 10 minutes to remove the bitter taste. Clean and cut the peppers. Pare and chop the tomatoes (you can also use canned tomatoes). Also cut the mushrooms into thin slices. Fill the small casseroles, add black pepper and salt at taste and flavor with olive oil. Bake it at 200 degrees for about 40 minutes.
