• 1 rabbit about 1.5 kg. (along with the offal);
  • Rice - 200 g.;
  • Mushrooms - 130 g.;
  • Olive oil - 100 g.;
  • Red wine - 100 ;
  • Green onion - 2 small stalks;
  • Мint at taste;
  • Pepper at taste;
  • Salt at taste;
  • Parsley - 1 bunch;
  • Bay leaf;


Fry the well cleaned and chopped rabbit offal, then add the chopped onion, mushrooms, rice, parsley, pepper, salt and pour 200 ml. Of water. Stew at a low temperature  until the complete evaporation of the water. With one part of the mixture, fill the rabbit and sew it. Put it in a baking tray and pour the wine on top of it. Add pepper and salt, about 100 ml. Of water, place the bay leaves and cover the baking tray with a foil. Put the rest of the mixture in the tray, along the rabbit. Bake  for approximately two and a half hours at a high temperature (200 degrees).
